Abstract
The present invention relates to a method of making dough comprising mixing dough components, a phospholipase a2 enzyme acting on N-acyl phosphatidylethanolamine at the sn2 position and an enzyme acting on polar lipids at the sn1 position. Also taught is a food enzyme composition comprising: a phospholipase a2 enzyme capable of acting on N-acylphosphatidylethanolamine at the sn2 position; an enzyme acting on polar lipids at the sn1 position.
