Abstract
A method for increasing the softness and relaxation of a dough, the method comprising a) adding to the flour or to a dough comprising flour at least one endopeptidase with at least 60% identity to SEQ ID No. 1 or SEQ ID No. 2, wherein NO L-cysteine and/or sodium metabisulphite is added to the dough; b) kneading the dough; and c) forming the dough into an edible product.
