Abstract

PROBLEM TO BE SOLVED: To provide a method for manufacturing high protein acidic liquid dairy product having reduced viscosity.

SOLUTION: A method for manufacturing a high protein acidic liquid dairy product containing 6% or more total protein by weight includes a) a step for providing a liquid composition wherein the liquid composition contains 6% or more total whey protein by weight, at least 30% by weight of which is in the form of insoluble particles of denatured whey protein, has a volume weighted average particle size, D[4,3], of up to 50 microns, and over 90% by weight of the total protein is whey protein, and b) a step for subjecting the liquid composition of the step a) to acidification and heat treatment steps using an acidifying agent and for obtaining an acidic heat-treated liquid composition, and Ca2+ and Mg2+ cations are added before, during or after the step b) in amounts of up to 100 weight ratio between the total protein in the acidic heat-treated liquid composition and the total Ca2+ and Mg2+ cations in the acid heat-treated liquid composition.
