Abstract
Crystallized 2-O'-fucusyllactose (2'-FL) produced by a process comprising the following steps:
i. Culturing a genetically modified cell with a recombinant gene coding for a 1,2-fucosyltransferase and capable of producing 2'-FL by fucosylation of lactose in an aqueous culture medium containing lactose,
ii. Separating the aqueous solution of non-carbohydrate particles and contaminants of the aqueous culture medium, the aqueous solution comprising 2'-FL and a fucosylated carbohydrate other than 2'-FL, the aqueous solution being 35-80% by weight with respect to their carbohydrate content , 45-95% by weight of the carbohydrates in the aqueous solution being 2'-FL, and
iii. Crystallize 2'-FL from the aqueous solution.
