Abstract

The present invention relates to a process for providing a jellyfish-based product, said process comprises the steps: providing at least one raw jellyfish; freeze-drying the jellyfish, pulverizing the freeze-dried jellyfish; and thereby provide a jellyfish-based product. The invention also relates to uses of such jellyfish-based product, such as a gelling agent, an emulsifier, an oleogelling agent, and a foaming agent.
