Abstract

The present invention relates to novel whey protein hydrolysates with reduced allergenicity and retained immunogenicity. The novel whey protein hydrolysate is further characterized by having a low amount of larger peptides. The invention also relates to a process for preparing the novel whey protein hydrolysate, to the use of the novel whey protein hydrolysate and to food products comprising the novel whey protein hydrolysate.
